Whats Cooking?
Dinner time! sometimes quick and easy or slow and dreadful...I think it just depends on the mood I'm in to cook, whatever mood that is dinner has to be ready, especially for my little guy! He's always ready to eat. So last week I tried a new recipe a twist of my own, on a classic, chicken cordon blue. Not so much by choice but because I had to substitute cheese I used cheddar . It was actually very delicious we enjoyed a good meal with a side of green beans and potatoes, not bad for doing it while the kids napped. I also like to try new recipes because zeeky ( my 19mth son) has eczema, super dry skin, and in order to help him alleviate some itching he is on a non-dairy diet, along with a other items like eggs, so I try things that I can leave somethings out for him but he'll still be eating what we're all eating. So for this his chicken was stuffed with ham no cheese. He enjoyed it very much! Now for this week I found a recipe for a green pasta, sounds too healthy, maybe, at least I thought so for my husband ;D as I was preparing it I thought oh no what if it doesn't turn out good and this will all be a waste, luckily I kept taste testing and adding more salt n pepper as needed and believe it or not it was delicious my kids tried it and finished their portion! (not by force :D ) We really all enjoyed it and had a great dinner. So what great recipe have you tried and thought would end up in the disposal but turned out great? I would love to try any recipe your family loves to share with mine!

Katelyn's Birthday Decision
So much has happen since the last time I came on here. Now we have a two month old son named Ezekiel and our daughter is now 21 months! Time flies when your living your life. We love our life and our family. My husbands work is a blessing and we are greatful to have our family. We are in planning mode, we have to start planning our daughter's 2 year birthday party. We can't decide if we should go to Disneyland or have it here with our family at the park. If we choose Disneyland only a few will be able to make it, and if we choose the park then everyone should be able to make it. We would choose the park but the only reason we are contemplating is because Katelyn LOVES Disneyland! and well so do we...Stay tuned for our decision....

We would like to keep friends and family connected and share our wonderful life moments. This weekend was Katelyn's 1st Birthday and it's just amazing how fast time flies! It feels like just yesterday we were getting ready to go to the hospital, and walking the halls of the hospital waiting to see how our little girl would look, but now it's been a year and we have enjoyed every minute of it! She is growing so fast and I'm greatful to be the one to watch her grow at home.
