Whats Cooking?
Dinner time! sometimes quick and easy or slow and dreadful...I think it just depends on the mood I'm in to cook, whatever mood that is dinner has to be ready, especially for my little guy! He's always ready to eat. So last week I tried a new recipe a twist of my own, on a classic, chicken cordon blue. Not so much by choice but because I had to substitute cheese I used cheddar . It was actually very delicious we enjoyed a good meal with a side of green beans and potatoes, not bad for doing it while the kids napped. I also like to try new recipes because zeeky ( my 19mth son) has eczema, super dry skin, and in order to help him alleviate some itching he is on a non-dairy diet, along with a other items like eggs, so I try things that I can leave somethings out for him but he'll still be eating what we're all eating. So for this his chicken was stuffed with ham no cheese. He enjoyed it very much! Now for this week I found a recipe for a green pasta, sounds too healthy, maybe, at least I thought so for my husband ;D as I was preparing it I thought oh no what if it doesn't turn out good and this will all be a waste, luckily I kept taste testing and adding more salt n pepper as needed and believe it or not it was delicious my kids tried it and finished their portion! (not by force :D ) We really all enjoyed it and had a great dinner. So what great recipe have you tried and thought would end up in the disposal but turned out great? I would love to try any recipe your family loves to share with mine!
